Skate is a type of ray. The most edible one. It tastes like a less fresh scallop.

College station had a pretty good cajun place. Heberts

Amen, they had sausage that could have been sold in Louisiana. I ate their religiously as a student and I hate that it's gone.

Houston has some good Cajun food. Got my only decent beignets outside of NOLA in Austin. It wasn't the same, but it was good.

I honestly haven't had lobster mainly because I generally stay away from fish even though I'm open to it. I've had the others and I'm good without them

I know what a skate is.

I have heard of people eating them, but I haven't.

Texas is about as good of a food state as there is. BBQ, Tex-Mex, and plenty of cajun that leaks out from Louisiana.

As long as you skip Pappadeaux's. Look, you can go to that sorry excuse of a Cajun restaurant if you want, but don't go cryin' to a Louisianian after.

Unfortunately, unless you're in Houston, other options are rare.

I'm from Houston. Third best food city in the United States in my opinion. Considering budget, it's number one.

Pappadeaux's used to be good for a Greek salad, but even that sucks now.

Do they still have Chili Fest in Snook every year? I went to that twice about 9 years ago and had a lot of fun there.

True, it sucks in Austin. I would love some good red beans.

The worst part by far of being an ex-pat is the Texas "king cake." They use fricking sprinkles y'all, its disgraceful.

What?

NYC, CHI, San Fran, LA, Portland, Seattle, Miami, and about 10 others are better.

When Houston has a place even considered for a Michelin star, get back to me.
