There used to be a place in Houston that had the same business model. I believe it was on Westheimer just inside the beltway.

Knoxville used to have a Butcher Block (higher end steak house) located in the World's Fair Park where you could grill your own. But you didn't have to grill it yourself.

I think like 96% of prime graded steak go to steakhouses.

It's better meat than you will get at the grocery store.

That said, personally I think choice is still pretty damn good, and if you know what you are doing, you can usually pick out a pretty high quality piece of choice.

I love to grill and have an awesome marinade I put steaks in for 36 hours or so. Tender and scrumptious as hell.

Now, having said that, there was this place that sold pre-marinated steaks that they cut themselves. Pricy , yes, but theirs were even better. So I can kinda see where people might do what the poster said.

There was a place on N. Main St. called Ryan’s Steakhouse which was pretty close to the Gatornationals venue. I remember it as an upscale Golden Corral with the buffet but they may have had the steak prep that you described. They closed probably 25-30 years ago. The food was great.

You used to be able to grill your own steak at the Butcher Shop in Cordova. Not sure if they still allow that.

I believe it was called Great Steaks, if it is the one where you cook your own steak.

And it is now closed.
