Jambalaya done the correct way is unbeatable. None of that shite that is heavy on the tomatoes that you'll find in some places. I'm talking some Ascension parish sausage & chicken (similar to the recipe posted by PocheJr[I think] on the F&D board)
Gumbo, close second.
Boudin (link or balls), is the greatest snack. Followed by Crawfish pies and Hogs Head Cheese.
Hell anything with Crawfish (etouffee, bisque, etc.) is up there, including Crawfish boudin.
Sauce Piquante is probably the most underrated.

Rice and Gravy is a simple, quick meal that'll get the job done.

That brings back memories, my grandmother on the porch in late July - crushing the ice with the hand crank.

We had an old hand-cranked machine that required ice and rock salt. That stuff was fantastic.

And I usually hate fried okra at restaurants. It needs to be sliced up and put in a paper bag with some salt, pepper, flour and a little cornmeal. Then fried in a cast-iron skillet until it's crispy. None of that breaded crap.

Fried corn.I don't know what the proper name for it is.It's cut off the cob and cooked in a skillet.Its made with a certain type of corn that has a lot of starch.It's almost sweet.

Here is how to make ice cream with a small and large coffee can

Vanilla ice cream:
1 cup heavy cream
1 cup light cream
1 beaten egg (or use equivalent reconstituted dried)
1/2 cup sugar
1 tsp. vanilla extract

In 1 lb. coffee can mix all ingredients. Seal can lid well with duct tape. Put small, sealed can inside larger 3 lb. can. Pack ice and 1 cup salt around small can. Put lid on large can and duct tape closed. Roll back & forth on a large towel (optional) for 15 minutes. Open large can and dump ice and water. Wipe small can dry and open. Stir mix, scraping sides of can. Additional ingredients, eg. cookie crumbs, chopped nuts, can be added now. Reseal small can and place back in larger can. Repack with salt and ice. Continue rolling for 10 minutes more. Open large can and dump ice and water. Wipe small can dry and open. Enjoy!

We were talking about this at lunch on Sunday. The things I really miss are:
Fried chicken, on the bone, drenched and dredged and cooked in the fryer.
Potato salad or deviled eggs.
Mashed potatoes - peel and cube, boiled and then throw in a stick of butter and whip with a hand mixer.
Homemade pickles, washed and soaked in a big galvanized wash tub, put in Mason jars and stored in the basement.
