Locally (Tallahassee), it's tough to beat Wells Brothers and the 'Gator Hater' burger. If you're ever in town and craving a hamburger, Wells Brothers is a must.

Real beef. Fresh tomato, not big on lettuce but if it's fresh it's good, freshly sliced (not diced) grilled onions, ketchup and mustard OR a good assume. Put mayo on the bun and then grill it (trust me.) A good quality bun can also make a huge difference. Let cheese melt a little.

One I made recently
Half bison
Half ground sirloin
With the meat mixed in was ground clove, fresh cilantro, homemade jerk rub, chopped scotch bonnets, and carribean style brown rice kidney beans.
Grilled pineapple
Serrano pepper aioli
Avocado
Fried onions
Pica peppa sauce
Avacado did a nice job taming the heat for those that can't handle a lot of spice.

I've made a similar with cream cheese and pepper jelly, with bacon as well. It was pretty good.

I don't get lettuce or tomatoes on burgers. Feel like it waters it down too much.
Adding a fried egg is always a game changer.
My northern friends convinced me to put peanut butter on a burger and it actually turned out really well, despite my previous protests.

The only time I don't like my bacon having a crunch is when I make pork belly tacos on the grill.

perfect patty, juicy, medium rare, seasoned (but not too much).
Great bread (brioche generally makes for the best buns). It needs to be a little chewy on the outside, but soft on the inside, buttery, and just a touch sweet.
Melted cheese. I like options. American Cheese is just the worst (even if the mood strikes me every now and then). I generally crave swiss, provolone, or pepper jack. It needs to be real cheese, melted all the way, and not some liquidy cheese sauce like Wendy's uses on everything.
A great burger needs no sauce, but a great sauce can improve any burger. I'm not a big fan of mayo or mustard. A garlic aoli, a great BBQ sauce, or maybe a spicy mayo or pepper jelly can all be great options.
Toppings matter. With certain types of burgers, I want lettuce, pickles, and tomatoes. Others, I want grilled onions and mushrooms.
Bacon is a great option, though I don't always want it.
Some places that make incredible burgers:
Craft style (brioche buns, lots of cheese and topping options)
Flemings ($7 during happy hour 5-7)
Barcadia
