Miss Datil, is a true lady. Try to eat her raw and she will slap the shite outta ya.

As you said, she has a slow burn, but that 300,000 Scoville units will not be denied. Her earthy sweetness blends well with any dish and does as much for the enhancement of the flavor of food as salt.

One of my all time favorites is to sprinkle a little Datil dust into your Cathead Biscuit doe.Put em in the oven and let em rise. Your friends will take the first bite, wipe their brow and give an approving wink.

Don't have Datil's? Get em. Got Datil's? use em often.

You will not be disappointed!

A lot depends of what you are going for, heat or flavor.

I tend to go for flavor over extreme heat.

Cholula and Tabasco Chipotle are my two current favorites.

Panola makes a decent sauce as well.

Frank's RedHot Buffalo sauce on deep fried wings is hard to beat. Probably not my favorite hot sauce though. Mix in some freshly crushed pepper. But, like other people have said, different sauces go with different foods for me.

Also in the camp of using different hot sauces on different foods.

One I haven't seen mentioned is Cajun Power Garlic Sauce. It is definitely not hot, but I love the flavor and can put it on almost anything

Is anyone else here a "plain eater"? It just seems like some of you guys would put that stuff on anything. I like eggs to taste like eggs...not vinegar and peppers. But I like hot sauce too. But, to each his own.

Tobasco is what I ask for most often. I also enjoy Panola Pepper Sauce and I haven't seen them mentioned.

That is where I use it a lot too. Also in some gravies and BBQ sauces

Don's Specialty Meats in Scott, LA has their own brand of garlic sauce which is pretty good, too. Their hot sauce is a good blend of heat and flavor, as well.

Remade my Jamaican hot sauce today with the recipe above. Also made a Mexican hot sauce today with some jalapeños I had. Same pickling brine just added red onion, fresh oregano, cumin, and garlic cloves. Interested to see how it goes.

Tabasco. At the end of the day, it's red peppers, vinegar and salt. Some of them try to trick up the process with thickening agents, but as long as the ingredients list is those three things, I'll eat it.
