I think Connington legitimately believes he's a Targ. I think he's been made to think that via Varys (who I think is a Blackfyre and that's why he keeps his head shaved) and Ilyrio. And he's blinded a bit by his affection for Rhaegar (you can argue just how much affection he has too).

Coldhands fascinates me, but the fantasy series I like most usually have a lot more mysticism and magic, so it makes sense that I am drawn that way.

Which is why I'm interested in Euron. He drinks Night Shade for visions and he has been sailing the world looking for mystical artifacts(the Dragon's horn). He's an enigma.

Victarion's alright. I just felt like every time I turned to a chapter that said "THE DROWNED PRIEST" I was rolling my eyes, like, "damnit, I need some Arya up in this mofo."

Things I find interesting about Coldhands:
His eyes are black. Not blue like The Others or the wights.
It's pretty obvious given him addressing Sam as "brother" and wearing black that he was at one point a member of the Night's Watch.
He cannot enter the Greenseer's cave. He also cannot pass through the Black Gate which he should be able to as a member of the Night's Watch.
I know that GRRM in an interview debunked him being Benjen Stark. An interesting theory is that he's the Night's King which would make some sense for how he favorably treats Bran as a Stark as well.

Whenever someone points to Martin's character development as superior to Tolkien's I point to Dany as one who in my opinion he's grossly mishandled. She makes great strides then seemingly starts derping up for no good reason. It's annoying.

Plus one of the Children of the Forest (Leaf I think) mentions that Coldhands "died long ago". That seems to suggest that it well predates Benjen Stark's disappearance.

He has great development but I have to agree with you there. It's something I've bitched about the whole series. And it's mindblowing because apparently he absolutely loves her character.
That said, I think part of her indecisiveness is contributed to her being a teenage girl. We tend to lose that watching the show and seeing her much older.

I told Belle in another thread that I dont really like Martins character development. I haven't read Tolkein in a long time so i wouldn't really know how to compare.

Coming up in the next Daenerys chapter, Dany finds an old coin in the street and throws it into a fountain for luck. Then she takes a nap. After the nap is over, she sits outside briefly before going back inside to get something to eat.

I understand the teenage part but GD be consistent at least. The way he's handled everyone else's sans Sansa and Dany is great. Sansa's character is the worst of the major POVs IMO. Filler material for Littlefinger.
