Gobble Gobble! Fried or Roasted? I had my first Cajun fried turkey last Thanksgiving am I’m not gonna lie, it was Freakin awesome.
That’s the only reason I’m already up. Promised the MIL I’d have one for her also.

I've done two in the past, one fried and the other roasted but this year is only one bird at 21 pounds roasting.
My wife's family has a way to cook a bird I had never heard before, but it puts out great results: Get the bird, slather it in butter (I make small holes in the skin and throw more butter beneath the membrane) and put it into a paper bag, being sure to staple the bag shut. Cook at 325 for 20 min/lb for a bigger bird and you will have a perfect turkey.
The only slight drawback is you might lose a little skin when opening the bag but the meat is perfect and juicy every time.
I woke up at 4 and it was in the oven at 4:45
