I have been doing the same thing here in North Carolina with their BBQ. Co workers have been trying to tell me the food is better here than in Louisiana and it has been such a let down. The BBQ here is nothing more than just the sauce. The meat itself seems like it is cooked by amateurs. Texas actually takes time to prep the meats and flavor it before cooking, rather than just slapping sauce on meat and calling it BBQ.

Random side note; the hell is the matter with the hush puppies here? White corn meal and no onions, celery, or peppers mixed into the batter? Gross.

Similar experience in NC. Went to visit my SIL's husband. He was in school at Duke. We took in a game with the crazies, great experience. Then we went to get some Que. He took me to The Original Q Shack. It was decent, but nothing special. To the locals, it was the BEST.

I'm leaving for College Station tomorrow morning with a buddy of mine, we'll be getting there by Thurs afternoon. Staying about 2-3 miles from the stadium. Where should we go to try the best brisket Texas has to offer?

Well, Your opinion is wrong.

Nevertheless, our pulled pork and ribs are still ahead of yours. Come to pecan lodge in dallas and you’ll never want to eat pork product from anywhere else, especially SC.

Around CS. Go to Fargo’s in Bryan, best Q in the brazos valley, hands down.

How far you willing to drive?

If you want to stay in town then Fargos is the way to go. Not the best, but its good.

If you're hunting some seriously great stuff then Snow's in Lexington, Tejas in Tomball, or Corkscrew in Spring. They're all an hour to an hour and a half away from town.

If you need any other recommendations, just ask. Pop into tArk. We're pretty friendly and helpful.

Kreuz Market in Bryan will save you the trip to CenTex(Lockhart,Lexington, etc). I keep forgetting they set up shop in Bryan now.

Haven’t been to that location, but Kreuz makes the best sausage in the world and brisket is top 3 I’ve ever had and I know they wouldn’t put their name on it unless it was the same quality.

Thanks for those recommendations, if any of them were on our way there or back (we're driving) I'd definitely be willing to give one a try, but they seem a bit far out of the way. I've never been to a TX BBQ joint that didn't have pulled pork, brisket, pork ribs, and turkey. Most also have sausage or hot links, too. Some have beef ribs.

As for other CS recommendations. Northgate is a must. If you go on gameday then the Dixie Chicken, Corner Bar, the Backyard, and Blackwater Draw Brewing. At night it is a whole different animal.

Other eateries, Fuego is a solid breakfast, late night, or quick taco. I guess its considered fast food, but damn its good.

You want to spend a little money and class it up then Republic is my favorite. They make one hell of a steak and have a nice drink selection.

Casual burger & beer = Koppe Bridge, either location. They new trendy burger joints too like Grub, which is solid too.

Not exactly what most are looking for on visiting a college town, but Blue Baker is one hell of stop. They have great bread, pizzas, soups, sandwiches, and cookies.

This is my issue too. The chicken skin turns out too rubbery. And this is after I leave it sitting uncovered overnight and try to dry the skin off before putting it on. I don't do whole chickens enough to really worry about it though.

Brisket, Ribs, and Butt are my go tos. If I do poultry I prefer turkey.


You have to up your temp up to 275-300. You have to do your chickens separate from brisket and ribs if you want that skin more crisp. I like to do sticks and thighs for about 1.5 hours.

I like all bbq. To say brisket is not is just absurd. I do brisket and butts, but often default to ribs for time constraints.
