Gumbo
Meatloaf
Bean soup
Marinara sauce
Omelets

Only 1 belongs and the other is an interloper promoted by California growers

The trinity(onions, celery, bell peppers) has been used and incorporated into every Cajun dish alive before Cajuns even knew California existed

My only contribution to this thread is if you want good Cajun food, let a Cajun cook it for you. Company I used to work for held a community event every year and served jambalaya that was cooked by a pure blooded giant Cajun man with the last name Rousseau. It was divine.
