It comes from something else. Spring break used to be called AEA. It actually stands for Alabama Education Association. Long time ago there used to be an "A-day" in the spring when schools basically took the whole day off for spring type games outdoors. Sometimes carnival style celebrations.
I am pretty sure that is likely where it came from.

Maybe because its a spring game and nobody really cares what you call it? Although I guess we could get both AD's to meet up together and play rock paper scissors to see who has to change their name.

The only two schools I have ever known of that refer to themselves as just "STATE" are Mississippi State and Michigan State.
