It shouldn’t.
If Notre Dame did beat Clemson and Alabama sometimes then they would be ranked 3-5 each year instead of 7-10. They can’t beat the elite tier of Bama/Clemson/UGA/Ohio St, but they can beat everyone else, and they usually do.
Let me ask you this? Which teams are ranked behind Notre Dame that would beat Alabama and Clemson? I’ll wait.

They had played 2 ranked opponents all year:
A Wisconsin team where Notre Dame was their third loss out of their first 4 games
A Cincinnati team that beat them 24-13
After that they progressively moved up in the polls by:
Beating a "struggled against Richmond" VA Tech by 3 (up 1 spot)
Beating then 3-3 USC (up 1 spot)
Beating then 4-3 North Carolina by 10 (up 3 spots)
Beating then 2-6 Navy (up a spot)
Beating "gave up 66 to BYU" Virginia (up a spot)
Beating then 3-7 Georgia Tech (up a spot)
That's why people say Notre Dame is overrated. They get the benefit of the doubt based on the name of their opponent, not the quality.

You're the one that wanted to make an argument based on the regular season, but threw in post season games.
Again, Notre Dame plays a soft schedule and gets their asses handed to them when it comes to the post season.

It's not just "did they win or lose" but rather "were they competitive"?
Notre Dame hasn't even been competitive in those games. Not just a single game, which could be considered an outlier, but in all 3.
Notre Dame's consistency is being consistently overrated.
