Don't forget "aggy".
At least "texas university" has basis in history. If you look at programs from the 30s to the 60s, they actually refer to themselves as "Texas University".
The reason for the lowercase t and lowercase u is that they are not THE University of Texas. They're just another texas university.
As far as "tea sippers", it's basically class warfare. Blue collar, salt of the earth farmers and Soldiers (Aggies) vs. trust fund entitled brats that sit around sipping tea while the real Texans work for a living.
