Ok...first...a lot of these songs mention cities or states, rather than schools. Using that criteria:
Copper Head Road - Steve Earle "He was headed down to Knoxville with the weekly load"
Tennessee Stud - Various Artists
Tennessee Waltz - Various Artists (my favorite being Sam Cooke)
Knoxville Girl - The Louvin Brothers
Daddy's Gone to Knoxville - Mark Knoffler
Rock N Roll Jesus - Kid Rock
1952 Vincent Black Lightning (Del McCoury cover)
I've Been Everywhere - Johnny Cash
When You Leave That Way You Can Never Go Back - Confederate Railroad
Ballad of Thunder Road - Jim & Jesse
Tennessee Jed - Grateful Dead
Tennessee River - Alabama
Tennessee - Carl Perkins
Biggest Fool in Tennessee - Eddy Arnold
Dallas - Alan Jackson
Tennessee Christmas - Amy Grant
T for Texas - Various
God Bless The USA - Lee Greenwood
Tennessee Plates - John Haitt
Leaving Tennessee - Robert Earl Keen
All My Ex's Live in Texas - George Strait
Bucket T - The Who
Who Wouldn't Want to be Me - Keith Urban
Smoky Mountain Rain - Ronnie Milsap
I quit...there are too many freaking mentions of Tennessee or Knoxville in songs to list them all, so I'll just stop there.

There are also songs that mention "Little Rock" in reference to the Central High integration crisis.
That's nothing to be proud of.

There's some God-awful Elvis song from one of his 60s movies about Spring Break that mentions Auburn in a list of different colleges (Michigan State is the only one I remember.)

What I love is all of the northerners who come to Alabama now and think they know jack shite about the culture and region outside of Campus . It's amusing.
Yeah, I have one of those bumper stickers that says "Welcome to Dixie. Now go home!"
