If Minnesota or Illinois were worth a damn they would have played several more SEC teams because of bowl tie-ins.
Since 2001, LSU has played Arizona, Arizona St, Oregon St, Washington, and Illinois.

I get why Arizona and Arizona State are high on the least played list. They weren't part of the Pac 10 until the late 70's (played in the WAC and another smaller conference beforehand) and the SEC historically doesn't have a ton of bowl games against PAC 10 opponents, even when the lesser bowl games didn't have conference affiliations.

The southern states wouldn't allow their white players to play against black players for decades. It was a big deal at the time. Some teams, like Maryland, would agree not to play their black players when they played in southern states, others did not. State law prohibited the Sugar Bowl from allowing blacks to play, which contributed to the agreement to host the SEC champ - that, and the Rose Bowl didn't want to have anything to do with teams that refused to play against blacks, hence their Big10/Pac8 relationship.

Tbh, I think many schools just never wanted to play us. In our SWC days, I was jealous of A&M's Cotton Bowl matchups. Arkansas would usually get a Big 8 or SEC team in the Cotton Bowl, while A&M and Texas would get Notre Dame and Ohio State. We played UCLA one year, and have had a couple of H&H series with USC-W, but the vast majority of our OOC P5 games have been against Big 8/12 and SEC teams.

Really wish the SEC went more OOC in the 70's and 80's but schools made almost ALL their revenue off attendance and in UGA's case they knew the guaranteed sellouts vs Clemson and SC was a big part of the revenue stream
