Texans smoke the meat and after it is done, they mop sauce on the meat. Barbque is cooking meat over a hot fire with sauce on it while cooking. I lived in Texas for 11 years and learned the smoke vs barbque stuff.

There is a lot of beef snobs who don’t believe in tampering with the natural taste of the beef.
Like if you poor A1 sauce on a steak, the whole restaurant might gasp.

Rodney Scott is the king of BBQ, and he’ll even tell you he doesn’t like sc bbq(mustartd), even though he’s from sc, his family cut their teeth in the peedee(where they prefer bc whole hog vinegar bbq) and it’s amazing.

When you smoke pork you don't smoke it with the sauce on. It's going to be cooking for hours and hours; the sauce would burn black if you tried to do that. You smoke it with a rub on it. The sauce goes on at serving.

South Carolina actually is split into 3rds when it comes to sauce. Tomato, mustard or vinegar and all 3 are better than Texas bbq

Hite was a huge Gamecock fan but Scott blows him away when it comes to que.
Just a note anyone thinking about Maurice Bessinger piggypark this weekend good luck as the main plant ( only plant) burnt down last weekend

Texas Monthly is having their annual BBQ Fest this weekend, in Lockhart, Texas (barbecue capital of the world).
