The very simple answer is....LK arse is on the hot seat day 1. He has to win now more that any new coach ever has in history.
He couldn't risk waiting..Levitt was the best available at that time and he jumped on him.
but I could also see LK cutting him loose and going after duke QB, if that QB will entertain him.

If I recall, didn't UGA have a QB get injured, that ended up leaving.... and yet I believe that same QB is playing for a natty.
Seems like you would have passed on the guy because he was injured.

To be fair to LSU, Mensah wasn't supposed to enter the portal. He had already signed a deal with Duke. Cristobal tampered with him on the last day because he was beyond desperate for a QB and convinced him to hit the portal.
