Chewing the sagebrush is just a funny local saying that people in Oklahoma say to each other. It means to take things easy, to relax, and to share interesting information.
Texas has their own sayings too; it isn't just us. For instance, they say big cattle hat to indicate a rich person or a person that is to be respected. Example: "Hey, look at that big cattle hat right there. That is a big time, big cattle hat Texas booster." Matthew Mcconaughey is a big cattle hat.

There could be a good reason for that...
Mostly the fact that other than along a couple of the rivers in western Oklahoma... there isn't any sagebrush to chew on in Oklahoma.
