The industry needs to do a better job of marketing but it’s shrunk to the point it’s difficult to afford the level of marketing. We saw a big turnaround during Trumps first term where the industry grew in acreage for the first time in 15 years, and we processed the most fish in 2019 in 10 years. Then Covid came. Then Biden. Hopefully Trump gets the economy turned back around and more people can afford to buy the American product. US catfish is a couple dollars more a lb but it’s a much safer choice compared to the sewage the Vietnamese raise their fish in

It's just too expensive in general compared to other meat.
It is what it is.
And Vietnamese fish costs about half what US fish costs, less than half.
$87 for US per case, wholesale. Vietnamese is $35 per case. Sysco wholesale, today.

It’s mild when one is good and the other isn’t.
When both are good it’s kind of heated but not too bad because the loser still feels good about a decent season.

Larry’s has the best fried catfish in the country. I’ve never had a bad piece of fish there
If every restaurant could prepare it like him our sales would double. A lot of restaurants don’t know how to properly cook it. For frying you want 2-3 oz fillets, 3-5 oz is ok too. If you use big fillets you better trim it thin, the “off flavor” taste is held in the fat and bigger fillets have more fat. Small fillets are lean and less likely to carry a muddy or algae taste.
Fry it in peanut oil. That’s the big key. And don’t get the oil too hot, or the fish will be mushy and fall apart

It shouldn’t be that high. I bought a 15 lbs box of 2-3 oz fillets 2 months ago from the plant for 45 bucks.
Sysco isn’t wholesale, they’re a middleman and it’s a big problem we are dealing with. Prices are down on the pond bank and at the plant but distributors and restaurants won’t lower their prices. They’re just making bigger profits and it’s killed our sales. You can buy fish direct from the processor for 45-60 dollars a case right now

I don't know anythng about what he knows about the catfish industry.
He claims wholesale was $45 a case for him. 2/3oz even.....which is kinda wild. I mean I know a guy who orders about 25 cases of 3-5oz and Steaks per week. He'd dream of filets, 3-5oz, back under $60 wholesale again. 2/3oz......oh mama please. Steaks are $52 a case. Steaks.
He may grow it. He may sell it to the wholesalers. But he clearly doesn't know much about the end cost to the final customer.

I’m not saying your prices are wrong. My point was the price has come down a lot for the farmer and the processors but the wholesalers/distributors and the retailers/restaurants aren’t lowering prices like they should be. My point was you shouldn’t be paying 90 dollars a case. It should be around 60-70 from Sysco if they’d lower their prices by the same percent that producers have lowered it because I can buy it direct from a processor for around 50. The last case I bought was from Heartland who had a sale to offload inventory and it was 45 bucks a case for 2-3 oz because sales of that size fillet have plummeted
