I have eaten at all times of days and night and I can say one thing for Waffle House, they are consistent from state to state and staff to staff. Their steak is not great and thin as hell, but damned if every time and place I have ordered medium rare it is actually medium rare.

It started in TX but seems to be in most of the SEC west now. Not so much in the east.
