Excellent question, and completely unanswerable. All three have genuinely good track records. None of them can be proven to be paper tigers (or pachyderms or alligators, for that matter.)
Edit: And can we stop using one or two games to prove any of the coaches are terrible or even not as good as advertised? Everyone has bad games, and when you're a coach, you run the risk of your players having a bad game as well.

Smart and it's not even close if one can put aside their petty jealousies and insane need to always try to underrate anything Alabama.

To be honest, Smart pretty much has control over that defense. Not to start a flamefest, but Saban is a total a-hole to his assistants and allows them little to no input without him asking for it. Essentially, you can't speak to Saban without being spoken to. Smart is the only exception. Make no mistake, he controls that defense, but Saban makes sure that it's defense first. Practices are geared toward the defense, etc.
That being said, my vote is for Smart.

The biggest knock on Chavis is the conservative playcalling in close games. Even though his defenses at LSU weren't quite as strong toward the end (and the same could be said for Tennessee), he's been one of the better coordinators in the league for decades.
Kirby has been a solid assistant coach that has contributed to Alabama's success, but everyone wonders how he would do on his own. I think this sorta holds him back a bit.
Muschamp fielded elite defenses at Auburn, Texas and Florida after serving under Saban. He's proven himself as a defensive mind at 4 different programs, so I'd have to give him the edge.

Out of that bunch, probably Muschamp. Pruitt is the best defensive coordinator in the SEC though.

Bama would have a top 20 defense with me as DC.
