Im bringing this thread back to say two things.
Sauce based BBQ is inherently inferior. You dont spend hours painting a car just to put a bumper sticker on it. Sauce covers flaws and meat flavors. I appreciate that it can taste good but if we are talking how good something is, sauce is a waste.
Two. Texas and its BBQ says hello. Pork is a lesser meat than beef. Beef BBQ is superior in flavor as well as much more difficult to do. I can smoke a pork butt or loin in my sleep. Brisket and Beef Ribs are a completely different beast.
Unfortunately, there is only one decent BBQ in College Station but I understand another is about to open in time for fall. Enjoy your stay and repent of your porky saucy sins.
