Depends on the sub-disciplines really.
Aerospace - Basically equivalent
Bio/Ag - A&M is better
Chem - UT
Civil - UT
EE - UT
Industrial - A&M
Mechanical - UT
Nuclear - A&M
Petroleum - Basically tied
They both are excellent institutions flush with research money and alumni backing and federal grants and partnerships. Great assets to the state.

I am always amused at alums of a certain age trying to talk academic smack, as both schools were much, much easier to get into in the 1990s. Back then, you got auto admission to both with a certain SAT score.
The alumni base of each school is going to change drastically over the next 20 years. All the small town beer guts who squeaked through the system in a less competitive time will have been filtered out of the system.

Reasons I chose to go to A&M instead of Texas:
-Conservative campus
-Less gay (not that there is anything wrong with that)
-Actual college town, not in the middle of a liberal city
-Prettier girls
-Aggie network
-Much better ROI due to cost of living

Outside of a small handful of professions, (IB, top tier consulting, private equity, etc.) you will have similar career options graduating from Texas or A&M. I know people like to make jokes here and there, but no one who is honest would rather spend 4 years in CS compared to Austin.

Reasons I chose to go to Texas instead of A&M:
-Better academics
-Less gay (no milkmen)
-In a city people have heard of with fun stuff to do
-Way prettier girls
-Texas Exes network
-Much better ROI for the remainder of my life

College is networking for $200k. That's what you pay for. Better to get the credentialing and build your own network for cheaper.

Trolling aside, I absolutely would, and did.
I was auto admit to both back in the day. I visited both campuses and knee I would attend one or the other.
My first experience at UT was getting followed by a homeless meth head dude who kept telling me how good I looked and trying to get me to talk to him.
My first experience at A&M was walking behind an attractive blonde girl in a short pleated skirt when a wind gust came along and blew the skirt up giving teenage me my first glimpse of hot college girl arse in a thong.
I didn't even bother applying to UT.

Only if you want be farmer or mechanic. Texas farm school no can be trusted. Restrooms very dirty.
