The difference is that LSU sells just about the entire park as season tickets, while a capacity crowd at Dudy Noble will be over 50% general admission. Season tickets figure in the attendance every game whether the ticket holder shows up or not; that's true everywhere. But, at MSU and other parks with large GA sections, they usually don't have a lot of advance GA ticket sales, so there is no base of pre sold GA tickets to inflate the paid attendance when GA fans decide not to show.
