I can appreciate a different opinion. SOme people just like pork better. Its what they grew up knowing and whatever else. That is fine. I disagree, but okay.
It is the "beef is not BBQ" or "brisket tastes like bigfot's dick" nonsense that makes me wonder about some of yall. I love me some spare ribs, baby backs, pulled pork, pork loin, ham, and bacon. Get out of the BBQ relm and talk about chops. I'm game. It is fricking delicious. But it aint Beef.

Wouldn't it though. If it is more difficult to cook and most expensive then it seems like fewer people would enjoy it.

I'm not trying to claim which is the best here because I understand it's more about preference. That said, mine is to be able to get a good variety, and Texas has the edge when it comes to such things.

Demand is through the roof in a "relatively" small area. Overall, BBQ demand for brisket is not the same as pork. This is really more of a theoretical argument at the moment as there are more factors than just this, but If brisket was truly better, the overall market demand would be there to cause brisket to take over in all areas. It has not, and pork largely is king at BBQ outside of one region.
ETA: This is all in response to your assertion that because demand is high in a very select bubble, that proves that it is better. Just providing a counter argument.

Crawfish needs to be fresh and are only located in a certain region, this is not the same with the other two options(and save me the texas beef/fresh, yada, yada)

for the most part food is based on supply. you will see brisket in texas because we have so much more cattle than any other state. i was just looking at the numbers and the state of texas raises over 12 million cattle and the next closest state is nebraska at 6
different regions of the country cook different shite based on the availability of different shite. you wont find a shrimp gumbo outside of the gulf region, not because it isnt good, because it its delicious, but because states like michigan dont have access to the same quantity and quality of shrimp
