Gumbo and Louisiana hot sauce are the pic you post with a caption "Here's to the state of Georgia!"
At first I thought it was symbolism.... the gumbo was to represent Nicholl's St in Louisiana, and the High Life was representing St Louis Mizzou, until I realized High Life is Milwaukee. Then I realized I was giving you too much credit, and this was just a silly post with no meaning.

Yes. Something I picked up living in Lafayette.
pound and half chicken thighs
1 lb. andouille, halved and sliced
1/2 cup salted butter
1/2 cup all purpose flour
1 cup vidalia onion, diced
1cup bell pepper, diced
1 cup celery, diced
2 cups okra, sliced
4 cups seafood stock
spice "rub" (salt, pepper, paprika, cayenne, garlic powder, allspice - to taste)
Buy whole thighs - cut off the the bone and cut up. Heavily season meat and bones, set aside. Melt butter in heavy cast iron Dutch oven or thick-bottomed pot. Keep heat medium. Add flour to melted butter. Crack open a beer and stir flour and butter until the beer is done (don't shotgun it). Once the roux is the color of lightly creamed coffee/milk chocolate, add in diced trinity (celery, onion, pepper), cook until soft. Add seasoned chicken and bones. Cook until meat is slightly browned, add in seafood stock, stir and bring to a boil. Cover, reduce heat to low, simmer for one hour. Add andouille and okra, start your rice. Once rice is cooked, turn off the heat to the gumbo. Warm French bread in a 300° oven until outside is crispy. Remove, cut up bread. Serve gumbo over rice.
