For the pure instrumentals, I gotta go with Game of Thrones or Dexter. Honorable mention to House.
For actual songs, I still kinda like Gilligan's Island
Also really loved Scrubs', even though I guess that was more of a hook than a song

Either Welcome Back, Kotter or the Powerpuff Girls theme.
Thundercats also has a special place in my heart, as does the banjo version of the Scrubs theme they play at the end of the episodes.

It is a travesty that it was only on 1 season. Easily one of my favorite shows ever. Maybe my favorite. My wife and I still watch the dvd's sometimes.
