I don’t know if it’s plural or possessive, but
WHERE did this phrase start & what does it mean?

In all seriousness the phrase has been around forever. And it’s usually “Jimmies and Joes”. Meaning it doesn’t matter what gameplan you have or what coach you have, what matters is the players you have on the field/court. They are the ones who determine who wins and loses

You have to have the best players to win consistently. (As opposed to just good coaching)

There is no way in hell you've been on this board for 13 years and don't know what that means.

I always thought the phrase was "It's not the X's and O's, it's the Jimmy's and Joe's" meaning the players are more important than the scheme.

It is sort of the opposite of the old saying... "He can take his'n and beat your'n.... And he can take your'n and beat his'n.

Jimbo was right about one thing: You can't enter a mule in the Kentucky Derby.

I always thought it was elite players paired with great coaching. Like peak Saban at Bama

So appearance is more important than talent?

I’ve only heard it now being used.

This is the correct meaning, and it’s true.
Coaching matters but players matter more. A great high school staff could take a typical Georgia or Ohio State roster and beat the brakes off most teams regardless of who’s coaching them.
