Slow-cooked Ham Day.

Usually just do this for Thanksgiving or Christmas, but have some guests this week, plus a couple of hams in the fridge, means .... Ham Day.



Recipe:

1 7-12 pound ham, fully cooked, not spiral sliced.
3 cups apple juice.
2 cups cut up fruit: apples, oranges, etc.

Glaze:
1 cup brown sugar
1 tsp black pepper
1/4 cup Bourbon
1/4 cup maple syrup
2 tbsp brown mustard

Set up Big Green Egg - preheat to 275
Add 3 chunks of smoking wood (I chose hickory for today)
Rub ham with glaze (save excess)
Put pan with juice and chopped fruit below ham
Cook uncovered for 2 hours
Lightly glaze ham one last time
Cover ham with foil and cook for another hour

Voila.

I do hams similar to this but smoked then braised in cherry coke with a cherry glaze but it takes about 16 hours and it just falls apart.

Pretty easy.
Rub the ham down with a bbq rub that’s got brown sugar in it.
4 hours smoking at 250 straight in or over a pan with cherry coke in it.
After 4 hours wrap the ham in the pan add more cherry coke and cook until 200-205°

I’m going to ask a dumb question. Why would I need to cook a precooked ham that long? Aren’t you just reheating it and cooking on the crust?

It's a good question.

Internal heat needed for a pre-cooked ham is 140. For a raw ham is 145. Don't know why. I just follow the recipe which calls for pre-cooked. I'm sure someone on here knows.
