How are wrestling matches like this decided?
Is it total number of wins? Is there a point system?

A Fall is what non-wrestling folks like myself call a pin.

To determine a team winner, do they just count head to head victories or do the points accumulate from each match (are they even called matches?)

A team gets some points for a match win by points and a team gets more points for a win by fall.

Not sure how college scores, but that's how it is done in high school.

I believe this is right.

Match Outcomes & Team Points (Dual Meets)
Pin (Fall): 6 points for the team.
Technical Fall (Tech Fall): 5 points (15+ point margin).
Major Decision: 4 points (8-14 point margin).
Decision: 3 points (1-7 point margin).
Forfeit/Default/DQ: 6 points for the team.

So each wrestler can score anywhere from 3 to 6 points for his team.

There are 10 weight classes, so I guess 60 points would be the max.

Well there aren't any SEC teams still playing football and the typical basketball loudmouths seem down this season.
