My uncles in Georgia used smoke coon on the smoker when I was a kid until they died when I was grown. Thanks to them once a year I eat coon to this day at family reunion time. Gotta let it soak in buttermilk or vinegar for two days before cooking. After that how you cook it is personal.

They have an annual coon supper in Gillette, Arkansas every year in January. I’ve never been or eaten coon but I wouldn’t be against giving it a whirl. They say it’s good but pretty greasy….
