I’ve never been to Knoxville and decided to divide my trip with a night there. I’m staying downtown. Any restaurant recommendations?

For ribs I like Calhoun's on the river just below Neyland stadium.

Jackie's Dream For fried chicken
Edit: but it’s not downtown

Being downtown...here are some non-chain places you can check out.
Not Watson's
JC Holdway
Stock & Barrel
Lilou
For after dinner drinks...checkout Oliver Royale
or
Clancy's Tavern

Excellent suggestions. Would add Tomatohead for (expensive but good) pizza and Downtown Grill and Brewery for beer and food.

Hit Gay st downtown to find much of the downtown vibe.
The Downtown Grill and brewery is a decent casual dining spot if you want something simple
Clancy’s another place I like, it’s an Irish pub type spot but avoid mondays as it’s trivia night

I hear serraustitutes' BK on Chapman Highway is good if he uses new grease for the fries.

Didn’t expect a Jackie’s Dream rec but I’ll second this if you’re in the area

The Tomato Head is one of our go-to restaurants when in Knoxville.

What type of dining/flavor experience are you looking for specifically?

I eat everything. Not really craving anything in particular. However I did get disappointed with Italian on my trip so I’m down for some good pasta.

If you're feeling some pasta, check out Emilia's or Osteria Stella. Both are downtown in the middle of or close to the other entertainment, parks, bars, etc.
I should add that Italian is one category that Knoxville could do better in, but both are solid.

I’d recommend trying to get a reservation today. Both places fill up

Tomato Head is reliably good for pizza.
