Sheesh. That’s impressive. Assuming swimming is a big part of that?

Stanford dominates womens fencing, artistic swimming, polo, and fencing
there are about 5-8 schools total competing in each

Almost in every sport played...more amazing is the fact that they've won all these DESPITE their most rigorous and difficult academic environment. Truly remarkable. Same for UCLA & USC, both extremely tough schools academically.

They have a very strong athletic department (and no wonder: I'm sure the recruiting pitch is much easier for them compared to their peers). But while they're pretty good at most mainstream sports, they're always elite in some of the niche sports (which you pointed out aren't offered by that many schools).

I think Stanford has something like 32 or 33 varsity sports in total (in comparison, I think Texas has something like 20, which is relatively standard for power conference schools).

So, it's the age-old quandary. Do you want to put all your resources into football and dominate, or spread it out to all the little people?

More evidence that the Longhorns should have gone to the PAC where they belong.

In a pool of scholarships, the academic ones are determined by the school, while the athletic ones can only be a maximum, fixed amount per NCAA rules.
Stanford manipulates their system to accept "regular" athletes by skewing financial aid only to academic applicants (i.e., those who actually meet the more rigorous criteria).
This allows them to free up the majority of the athletic ones for students who might not otherwise qualify.
Ivy League schools don't offer athletic scholarships and thus can't do this, hence the reason why they don't compete as well — they must also meet the academic criteria you described.

That used to not be the case. Ivy League schools dominated college sports in the early years because they would cheerfully "buy" an athlete for a given sport.
Two things stopped that. One: people started questioning why the top academic schools in the country were enrolling students who barely managed to graduate high school. Two: other schools became a lot more competitive at offering sweetheart deals.
Faced with competing with schools that really cared about football (and other sports) the Ivy League schools gradually retreated.
Oddly enough the sleeping giants no one talks about are the military academies. Hypothetically Army, Navy, Air Force, and even the Coast Guard, can recruit as many players as they like. They can sign 10 players a year, they can sign 100. Because none of them are there on an athletic scholarship.
That is why Army and Navy turned from respectable strong programs into absolute monsters during World War II because they could cherry pick absolutely every athlete they wanted.

Yep. And, UT’s now moved into the top 10 of public universities if you believe rankings.

Unlike football all of these inferior sports as you might call them actually have been crowning a true national champion for a whole lot longer than football has.

UF has won 25 of its 47 titles since 2008. Since 2008, UF has won at least one national title in every fully contested athletic season.
16 different UF teams have won at least one national title, the 4th highest array of titles for a program and highest east of the Mississippi.
