3-2-1 for spares. 2-1-.5 for baby back has been my experience. It's the only way to do ribs. Infallible.


Power must have gone out at work. Just showed up to the 6 story office building and the AC has been off all weekend. It's gotta be 80 in here.

i’m still a heretic when it comes to ribs

dust them liberally with garlic powder and dunk them in Dales for 30 minutes

the grill them over an open flame

haven’t got the patience for that slow smoker

I've got the ribs and pork butt down pretty good - just 3-4 hours for the ribs depending on if they are spare, baby back or St. Louis. I got some skinny spare ribs from Riverview Farms in GA a few weeks ago and they were 3 hours and came out good but not a lot of meat on them.

I did 4 slabs of baby back on the Big Green Egg on Monday.

My routine is always something close to:

-Dry rub Myron Mixon BBQ rub
-200-225 for 3 hrs
-spray 50/50 mix of apple cider vinegar & apple juice every 45 min
-bump to 250 @ 3hrs (continue to spray)
-Check for bendiness @ 5hrs
-Baste with Williamson Bros BBQ sauce & bump to 300 for 30 min

Always tasty.

sounds great, i admit

but my way takes less than an hour from pulling them out of the fridge to putting them on the plate, and they’re still delicious

Me too. I have managed to get pork the way I want it but have not perfected brisket yet.

Personally I've never found any BBQ'd beef that out-tasted well smoked pork.

I live on a cattle farm. I have brisket along with the steaks, hamburger, etc. I try to make it taste like a quality BBQ place would but I am not there yet.

Granted I use a Masterbuilt electric smoker, but this has been my go-to for the past year or so with brisket and I haven't been disappointed.

Apply mustard liberally as a binder
Rub with a 2:1 ratio mixture of coarse ground black pepper and kosher salt
Wrap in cling wrap and put in fridge overnight
Preheat smoker to between 225 & 275 using post oak
Unwrap the brisket and put it in the smoker bare until a probe reads 165
Remove, wrap in pink butcher paper and return to smoker
Pull when the probe is anywhere from 200-210 (go by feel more than temp)
Leave wrapped in butcher paper but then wrap that in cling wrap.
Place in a faux cambro for at least an hour, preferably 2 - 3.
Remove, unwrap and slice

It is a soggy weekend here. I had planned to head down to the pond and try to catch a few bream or crappie but the storm kept me indoors. Saw a large red fox in my front yard this morning. I hope everyone is having a great weekend.

LRB where’s your farm at, if you don’t mind me asking?

We’ve stayed a few times at White Oak Pastures down in Bluffton, GA, and we get a lot of their beef.

South Central Tennessee, just a few miles north of the Alabama state line. I grew up on a much smaller farm just north of Huntsville but the area started turning into a suburb. I am familiar with White Oak Pastures. I lived in Georgia for a couple of years after graduating from Auburn.

i moved in here Jan 30th. It has only rained 2 days since I moved in. One day for an hour and another day it sprinkled for 5 mins


We are crusty dry here. All the grass is brown that is not getting watered and the ponds are all about to dry up. It was the same last year.

Hot and sunny forecast for Auburn this weekend. Cleaning the gutters early but then a full weekend of the pool, slow cooking some beef ribs and vast amounts of alcohol. War Damn!

I took the day off today. Cooked the wife some pancakes and bacon outside this morning. Fancy restaurant tonight with neighbors. Going to smoke my first pork butt tomorrow. Got everything I needed today. Will just hang in the pool all day while it cooks.

Taking the boat out all day Sunday. Pretty full weekend.


Finally getting my grove with this outdoor kitchen. They are now making requests daily.
