It really puts the schools in a potentially bad situation when they commit early but wait to sign.
You really can't continue to recruit for all your open positions if you have your top choices committed, but then if they decide to sign elsewhere on signing day, you are stuff out of luck. Too late most likely to get your second or even third choices most likely.

Lucky for us now we have a coach and staff who have shown they value the top grad transfer and transfer options.

While true, I don't worry about this as much when talking about guys in state.
