Where I have an issue is how alcohol is an essential need. In NC the state runs all liquor stores called ABC stores. They only sell alcohol are considered essential. Which I believe it is considered that because it is state controled for revenue.
If you stop alcohol sales, alcoholics go into withdrawal. Alcoholics who go into withdrawals will often need to go to the hospital due to severe withdrawal symptoms. This would place an unnecessary burden on hospitals, so it's better to just keep them open.

Not to mention the fact that alcohol helps with being locked up in a house with no where to go too

Hospitals would like the business right now. Outside of COVID cases, they're hurting badly and laying off people left and right. Our EMS call volume is down too. The reasons they're still open are (1) people like to drink. If they can't do anything else, at least don't deny them the chance for a buzz and (2) they bring in a lot of tax revenue.

If more spacing/constant temperature checks just became a part of normal American life, how might that affect the cold, flu, etc? Really interested to see that over the next few years.
If you just stick with wellness checks (or simply get people to voluntarily self-check and stay home) before going to high density events, the cases will go way down. Flu cases are going to plummet for the rest of the year because what we're doing now is a kill shot for it too.

I'd definitely be going crazy right now without beer.

They could also upload their menus online so people could access them from their phones. Less paper waste for more toilet paper production.

Reopen Alabama Responsibly
Just read the report. Retail stores, restaurants, barbershops, salons, childcare, tattoo shops and some medical services can open immediately.
Most other stuff is back on May 1st.

One issue that is going to need to be resolved is what the heck do you do with your kids for the next six weeks? I've been working from home this whole time, but we're fortunate that my wife is a teacher. Otherwise, what do you do with a 5 and a 10 year old?

Childcare can resume immediately.

I've been one of the biggest cheerleaders for putting people back to work but IMO opening back up to full capacity immediately isn't a good step. Start with reduced capacity and then step up.
Throw the doors wide open and there will be a rush like before they were closed. Do a week or two soft so that the new wears off slowly.

They have to maintain 50% fire capacity, not full occupancy.

If you have a 5 and a 10-year-old your childcare for the majority of the day is school.

I think employers are going to really need mindful of that. Working remotely (if feasible) needs to be a thing for awhile.

I spoke to someone who is in a position to know about these things the other day and there are many school systems in Georgia that are privately discussing shutting down until next January. Obviously Governor "I just found out yesterday that this stuff is really bad y'all" is going to declare business as usual much sooner than that, so you're going to end up with a lot of people having to voluntarily withdraw from the workforce if they go through with that.

Almost all of the re-opening scenarios and proposals I've read have school reopening in the fall in a staggered/mixed way to limit the number of kids in school at a time. Half the grades there in the morning or on M, W, F and half there in the afternoon or T, TH.......with the pieces of school most suited for virtual learning being done in that way. My wife works in specialties in DeKalb and their calls have all hinted at what you just noted or some variation of it, too.
And in that scenario (or a full closure) there is going to clearly have to be widespread acceptance of a very flexible work environment. The good news is that we were all forced into it for a month plus, so it won't be a foreign or scary concept for most like it would have been in the past.
