Sweet and Spicy Ribs

St Louis Cut, been on the rig for about 1.5 hours, apple wood, Tecate. Making a beer run.... smoker is on autopilot for the time being, just did the first mop at sweat 1. That's bbq expert speak, for those of you like Christopher who don't necessarily know what's going on.

Sweet!

I used to love a Tecate and lime brew.... have a bottle of Cabo Wabo in the freezer for shots<

Sweat #2, Mop #2. Starting to see the bones.


Today, the mopping sauce is a mix of store-bought bbq sauce, Texas Pete, Milk, Water.


No more smoke at this point... they've been plenty smoked.

Christopher is hand-feeding his pig acorns and dark beer in preparation for the Rib-Off. Twice a week, he mixes up a big bowl of malted barley and sourwood honey for the swine.

I had to go ahead and take these off against my best instinct.







They are making a V, not a U.

Mrs. Deeprig was ready to eat, they could have used another hour.

Rig, what does the milk accomplish? I have never heard of milk being used in a mop sauce. Does it make it tenderer? Let me know!

Milk is something i use in bbq chx, never used it fir ribs either, just wanted to water down the mop suace a little. It was different for sure, probably would have been better with tangy buttermilk, didnt have any on hand, i usually cook ribs spur of the moment and use what ever is around.

These werent competition ribs barbie, just something to fiddle with between drinking mulch and spreading bags of beer around the flower beds. I also planted gladiolus and forgetmenots.
