quite a bit actually. We are going to the lake house tomorrow and we will grind up the good meat trimmings with hamburger meat for some amazing Brisketburger Smash Burgers. I would say probably 4-5lbs between the fat and the meat.

Final picture before I wrapped it at 170. Bark was exactly where I wanted it. 2 or so hours left.

Rubbed and got them on the cooker at 1pm. Two small chunks of cherry to start. Cooker holding steady at 227.

Also, please be patient with deeprig as he struggles with laziness and thank you for Kirby Smart and for the few remaining shreds of Liberty left in America.
Forgive the ones who bashed Stet and Forgive us for our cowardice in standing up to the commie satanic forces that are ruining what’s left of this once great country.
May the RibOff nourish our bodies and strengthen the bonds that unite us in fellowship and faithful service.

I think you wisely picked a great state. Gator fans are still disgusting cheesedicks, and also an inferior sub species , but this place is radically conservative and patriotic now.
