Fields can be the better talent overall and not the better QB in the opinion of the staff making the call... That things aren't mutually exclusive.
Lawrence was made starter in game 5. I watched that Syracuse game, and he was completely lost on plays. Fields is a smarter player right now. The coaches filled in the gaps for Trevor and gave him the chance to grow. That was the mistake.
