Athens' Bar Term

I'm trying to remember the term Athens bars use for a small shot given to guest free if charge as a way for the bartender to thank you?
Anyone know what I'm talking about?
Typically, bars like Nowhere Bar, World Famous, & Cutters would do this.
It was something that was done after you paid. Bartenders would ask if you want a ___, which was usually a half shot of something inexpensive to show gratitude for your patronage. It wasn't offered to everyone, just locals/ regulars.
They had a team for it.

I have heard of roadies in places that allow for open containers. But nothing specific to what you are describing. I drank regularly in Athens bars for 17 years.

Buy Back is the term I have heard spending years entertaining in bars all over the US.
We had the chef at one steak house we frequented in vegas just show up at our table with a full meal of our and his favorites with a bottle of Caymus in tow. To say thank you for years of $3k dinners at his place. We tipped what the meal would have cost to the staff.

I was at Outback Steakhouse on a Friday night once. And the chef sent out a bloomin onion without us ordering it and didn’t even charge us.
Not sure what the term for this is. We figured it was meant for another table and scarfed it down quick and hid the plate before it could be noticed. But turns out the waitress brought it as a secret horsderve treat thinking we were local regular members of the cool dude’s club. Again, I forget the term

I once worked at the short-lived Philly Connection on Washington St. Sometimes people would just order a water cup with their sandwich and then go to the self-serve soda fountain and get coke. Nobody never said anything about it. We called it the "I don't give a shite because I make 6.25 an hour" code.

That basically is what it is for.
We used to get free drinks all the time at Abilene Icehouse/Blind Pig (late serving hours, too).
The bartender/server identifies a good tipper who is high in agreeableness and conscientiousness. The free drink usually increases the number of paid for drinks and cements the bartender as the "go to" for a night out (he/she has created a firm regular). And the final tip usually includes extra to cover the cost of the drink anyway (coupons often have a similar effect at a restaurant or barber/ hair stylist).
My wife and I used to go to Chin Chin 7 in Duluth/Sugarloaf area and get free sushi all of the time. It resulted in larger orders (paid for) when we go in and more frequent visits.
Little things go a long way for people high in agreeableness and conscientiousness.
