UGA has enough WR talent that we spread the ball around. Because of the large amount of talent catching the ball, our QB has 3500 yards passing despite UGA having a fair number of games where they didn't pass much in the later stagest.
Bama has a QB with 2500 yards passing. They don't have the receiving weapons they've had in past years.
Bama has 2 players with more than 350 receiving yards.
UGA has 5.
Bama has 4 players with more than 200 yards receiving.
UGA has 7.
You're making a logical mistake in thinking Burton is great because he leads your team in yards. He's simply the best option for Bama on a team with very few good options.
On UGA's roster, he'd have about 450-500 yards and be #2 or #3 on our yards list. Because that's what he is... a solid #2/#3 WR.
That has value. We'd love to still have him on the team. But he's not a #1.

He's averaging 3 receptions per game. I think the reason Saban said he left was to go to a more wide open pass offense that throws the ball around more.

At this point in the season, if your #3 WR (#4 pass catcher) has less than 300 yards receiving, you are not deep.
Niblack has 304 yards (TE), 3rd on Bama. UGA's backup TE has 249 for a comparison.
Benson has 162 yards, 5th on Bama. Law has 134 yards. UGA's #6 WR (a walk on) has 141 yards, 9th among UGA pass catchers.
Prentice has 282 yards, 4th on Bama. UGA's #6 pass catcher, 3-star WR/RB Dillon Bell, has 254 yards.
This isn't depth. YOu have 2 contributing WR (Burton and Bond), an okay TE and a 3rd WR who's VERY meh. Then you have nothing.

This is correct. The woman beater RarRa Thomas will have a hard time getting open on #3 Terrion Arnold. Arnold is tied for the lead with 5 ints in the SEC

Think about it for a bit.
Carson beck has 1000 more yards than milroe.
UGA only has a receiver in the top 20.
And the argument is that UGA has more receivers and is deeper.
Are you thinking about it?
While you are thinking... we can sustain a loss to Metchie/Williams because we work depth all year. Next man up means next man up for Kirby.
