Carolina sauces on tasteless BBQ is the reason I spent the first 25+ years of my life hating it.
Good pulled pork doesn't need sauce.

I've had both but I normally look at brisket as a side to pulled pork bbq. Kinda like ordering ribs along with bbq

It’s a preference thing. Probably bc of how we grew up. I already barely like the taste of mustard. I can’t picture it on anything but a corn dog or hot dog.

Yeah, I had the same thought. Personal preference based on how or where we were raised.
I love ham and I love bacon, so it’s not an anti-pig thing, I had plenty of pulled pork sandwiches. But beef is still more like a steak and pork is more like a side dish to me.

I eat bacon and pork chops. And pork rind chips. That’s about it. To be honest, I don’t see a lot of pork options at meat shops or grocery stores.
How pork chops are cheaper in my area than bacon is crazy to me.

I agree it's a preference but normally around here you get to choose 2 meats so I normally get pork and ribs. The one thing Texas doesn't have is Hash and rice. I will eat myself sick with hash .

Carolina BBQ is arse. If it's between that shite and Texas, I'm down with Texas and it's not even remotely close. You'd have to pay me a decent sum of money to eat Carolina BBQ.
But the pulled pork I make is good enough that it doesn't need sauce. I do like my ribs with a combination of rub and BBQ sauce that is caramelized.

Only thing I have to add to this thread is that long ago when I first went to Columbia SC I went to a Maruice's BBQ not knowing anything about it and it cracked me up. A fat little mexican putting on yeller bbq sauce for the first time in a fast food bbq place filled with white pride literature and a virtually all black staff. True diversity.
i can't remember whether it was great or not because I was just taking in the ambiance. I did take a bottle of that sauce home.

A good rub on ribs doesn't need sauce if you know what you're doing.

Sure, but BBQ sauce doesn't suck arse and is especially good when the sugar in it caramelizes. Sweet and smokey.

A microwave BBQ dinner probably tastes better than what comes out of the Carolinas.
It's funny how quickly you changed me on this topic. Here I was ready to give Texas hell, and then you remind me of how terrible some people do pork.
