Dicky’s Is representative of most Tejas BBQ I’ve ever had. I’ve been to other places in Tejas that were supposed to be legit but Dicky’s tasted just as good.

Brisket is trash meat.
I will never understand brisket fans.
The whole idea of brisket was that it was a terrible cut of meat with little to no flavor and the competition was based around getting it to taste better than pig shite.
I don't eat it and prefer good quality meat.

I love Alabama bbq...and I love Texas bbq.
BTW to you Florida panhandle baws..there is a new semi-Texas style bbq place in Panama City Beach that rivals Archibalds in Tuscaloosa in terms of quality. This place deserves support. Its close enough for the 30a crowd as well. Its called Back Beach BBQ.

Yeah in the midwest when you order brisket it's like crockpot roast beef in mild arse sauce. Sounds like what he's gotten ahold of.

All BBQ is divine. The beauty of BBQ is the diversity of it regionally. IMO pork=brisket=chicken=turkey when done correctly. But, pork ribs are best. The sauce is the difference. Texas style sauce kills the deep south (too watery vinegar sweet). And a proper slaw is mayonnaise based with garlic and chopped onions and a bit of mustard. And Texas BBQ usually comes with condiments such as sliced onions, pickles and jalapneos. Yum.

Brisket is beef. Low quality beef. It has tons of connective tissue and is very tough.
That is why it takes so long to cook.

Not anymore......I’ve sworn off BBQ until I go back to the south. They just don’t do BBQ proper in the Midwest.....which Texas is most assuredly. But you’d be right....if a man is eating BBQ in Texas he’s eating in the wrong place! Chicken fried steak? Texas. Beer? Texas. Bratwurst and Kraut? Texas. Ice Cream? Texas.....but that’s about it. BBQ, steak nor Mexican food is up to muster in the lone star state.

Goat and sheep both make a pretty good BBQ....but proper BBQ starts with a pig, some hickory, low heat and a LOT of time......and sauce is vinegar based with some crushed red pepper, some brown sugar...not to much, and some Tobasco sauce and ever so little sun dried heirloom tomato purée. Done right, as it’s done in North Carolina, Tennessee, Virginia, parts of Georgia, South Carolina, and North Alabama it’s so damn good it’ll cause a man to buy over priced airfare and travel for days back to God’s country just to get a fix. I know ‘cause many’s the time I’ve done it myself.....until I perfected the art which was bubbling just under the surface of my scots-Irish, Appalachian DNA.
I live amongst a pack of Texans.....Eastern New Mexico seems to be part of their natural habitat. Damn fine people, given to bragging more than decorum would dictate but you chalk that up to over compensating......about as much fun to be around as any group of folks....good beer, dancing with long legged women who’d shame anything in Paris or Prague, fantastic music.....and lousy BBQ......so out of gratitude and a keen sense of humanitarianism about once a quarter I do a hundred pounds or so of pork and hickory, a gallon of North Georgia Sauce and about 4 gallons of Brunswick stew.....and those poor, BBQ deprived Texans ring my house with pick ups, bring more beer than you’d think a state of less than 2 million would have for sale, get out th guitars and eat like they are damn near starved to death. Inevitably one or more of em will bring one of them briskets from this or that world famous Texas BBQ place and at the end of the night the dogs don’t turn their nose up at it........
BBQ is what you were raised on.......in the Appalachian South it’s more than food.....it’s family, community, faith and sacred. I’m sure folks in the Midwest, like my neighbors in Texas, feel the same way about brisket.....I can’t understand but I’ll make concessions to it as a caring understanding human.....bless their hearts......(and if you’ve eaten good BBQ your whole life you’ll know what that means).
