My brisket vacillates between acceptable and pretty damn good. I wish I had an offset smoker, but I don't, so I use my egg.
I have more trouble with pork ribs than brisket. I don't know why. I have had great luck with beef ribs, though.

I’m going to hang my head in shame and say most of mine I wind up grinding up with sauce for chopped beef sandwiches

That would be me, too, but I moved out of state, and had to learn to cook decent brisket out of necessity, since it is crazy how bad the brisket served in the bbq places around here is. They cut it thin and serve it like dry sandwich slices. I have no idea how they make it.

Since there's no such thing as chicken barbecue, that's a non-factor. Now, barbecued chicken is a different, and quite delicious, discussion.
