So just to clarify, your son turned down a $100k/year offer to play at an SEC school to attend a school he isn’t sure will pay him anything. And this is somehow a better deal for him.

Yeah I am a big Arkansas fan, so no hard feelings. Also you never know, he may still end up at Arkansas anyway. He hasn't signed, and even if he has, there is nothing preventing him from transferring down the road.
I tend to look at players being temps now. The guy you root for today could be playing for a rival tomorrow. Sad but true.

He clarified, he said the scholarship was worth $30k/ year and they were offering $3 k a month for expenses and about $3k a month profit sharing, as a minimum.
So basically most schools are offering anyone that signs a scholarship plus $5-7k as a minimum.

If you add that up; $30,000+$36,000+$36,000; it is worth $102,000. So lets just call it $100k. OP also said they had not discussed financials at all with Florida. So right now they have $0 offered.

The kid got the green light at the school he wanted to go to from the beginning. No one here knows what the best path forward will be for him, and he can always transfer if it doesn't work out at UF. Weird board.

According to on3 he has three scholarship offers currently; Arkansas, Florida and Ole Miss. Or had three offers. He is highly regarded as a kicker. But he is the 2,163rd ranked player in the country. And this thread reads like he is trying to play hardball.

Arky is better than UF right now and with Napier's future uncertain, I don't think it's a good idea to go to UF if there's no money involved. UF boosters may be asked to divert all the buyout money (it's probably over $40M to ditch Napier, deal with assistants, etc) to NIL this year, but then next year they may be asked to pony up the buyout money once again to fire Napier, and that means NIL money could be an issue, and I would not be counting on revenue sharing. Things are still up in the air on that one. Either way, it appears he would get more money at Arky. Do the math on compounding interest starting at age 18 or so, with $100k, or even $50k in the bank. In five rollover periods, that's probably over $1M, just with the $50k initial investment. That's life changing money.
That said...
- if he's always wanted to be a Gator, then no issues, he'll always have that, he'll have that helmet and jersey when he leaves and if that's a dream, no big deal. Money isn't everything, although it's very important.
- his education will not be better at UF. An undergrad degree is like community college: you get out of it what you put into it. If there is a degree program he's interested in because of UF, it's best to pursue that in grad school. That's where you will find a difference.
- I think it's a dick move to commit to a school, especially if a coach visits you time after time, and more so if you're a kicker or other special teams player, only to bail later on. And, if your son wanted to be a Gator forever, that should have been communicated to the other schools. Maybe it was, I'm not suggesting it wasn't. But it would be a dick move to not let them know.
- I think it's a much better chance to find a good chick at Arkansas than at UF, to be honest. Let's be real, if the choices are schools like Arky and UF, then winning is probably not a priority for him. So, these other factors should be considered. And there's always the possibility of taking the money, going to Arky, graduating early, and transferring to UF for grad school and finishing up eligibility there. This is especially the case if it appears he will redshirt.
That is really the optimal way to go, IMO. You get both experiences and end up in grad school at UF and academically, that is the time to be at a place like UF. By that time he has a good amount of money in an index fund. It's all gravy from there, and who knows, maybe he becomes a top kicker in the next few years, then NIL money rolls in and Arky and UF both bid for his services.
