Penn State versus VT seems like the most obvious miss of that list.
Ole Miss just became relevant in the past 10 years, so that tracks.

LSU was projected to play Michigan in the Rose Bowl in the 2006 season. But then USC lost to UCLA the last week of the season. USC dropped from the BCS Title game to the Rose Bowl as Pac 10 champs. LSU then got moved to the Sugar Bowl.
