Flounder fight their asses off considering their size. They are fun to catch.
It's because of their shape. They're fun to catch and more fun to eat.

Can't wait to catch some flounder, specks, and redfish this summer

Do you have to go far out to catch these fish? Can you go off piers?

My favorite place for all three is Grand Isle, LA. I haven't been in years though

I used to go offshore all the time. It's a lot of fun. You should get some friends together and charter a boat. Hook a big arse wahoo or dolphin or something and you will get a workout.

Pound for pound nothing fights like a small mouth bass. I love catching them.

You can definitely catch them off piers. I'd say flounder would be the most likely off a pier with bull minnows.

Depending on where the pier is, you can catch all 3 off of one.

My favorite spot is Port St. Joe, Florida. We go every summer. St. Joe Bay has to be the clearest bay in the world. Not many reds in there but tons of specks, flounder, Spanish, and sharks.

Rig up a few shrimp and you might catch a spec off a pier. I've never caught a redfish off of one though.
Hell I've caught baby flounder in a cast net off the shore while catching bait fish.

I hate the taste of Spanish mackerel

Closest thing to catching a big fish I've done was catch and release with big black drums and I had to give my pole away with this one I hooked. I fought it for like 30 minutes and the guy fought it for another hour. Good times.

We always went down to Apalachicola. When I was a kid you could limit out on specs before lunch. Then a hurricane pretty much destroyed it and turned the bay upside down and it just hasn't been the same since.

I enjoy it when we cook it the day we catch it or at most a few days afterwards.

We go to Apalachicola to eat oysters normally one day while we are down there.

Poor guy had to do all the bitch work with a fish he had never had the pleasure of catching.

I've probably consumed several thousand raw oysters down there over the course of my lifetime. I miss it.
