I've always heard Texas fans describe their relationships with their primary rivals as hating A&M, but not respecting them, and hating OU, but respecting the hell out of their program.

I actually have degrees from both schools so think I can give a decent answer to this question.
First, we both very much dislike each other, and I think it's going to get worse now that UT is back to being their typical blowhard arrogant selves despite not really accomplishing anything. In a way it's nice to remember why we hated them so much in the first place--it's like "oh yeah these guys are insufferable, I forgot what it's like when they are decent at football."
But the fanbases have chilled out a lot since the wild days back in the 80s (and even the 2000s where'd you see a lot more violence between the two). I think people in general in the country have chilled out more (which is a good thing--fighting over sports is European and trashy).
I also think a lot of it is due to both fanbases appreciating how special the OU/Texas game/atmosphere is. Normal college football games kind of pale in comparison to it (it's basically like Christmas if you're an OU or UT fan), and so I think there's just a shared gratitude that, in spite of all the changes to college football (mostly for the negative), we still have this game.

You have to understand these are two blue bloods - so the behavior is not going to resemble a bitch-bitch catfight like most rivalries.
Respect is there. Plus OU is so far down right now there's no joy in trolling them. In fact, many Texas fans fear that as long as NIL stays around, OU is down for good. What fun is that. We shall see.

Law school, bro. It wasn't that hard to get in for this born and raised Oklahoman. UT isn't nearly as good of a school as it likes to pretend, there are schools that are much, much harder to attend. UT Law is actually better and harder to attend than undergrad there, so I even have a leg up on the ones with a "Texas degree."
Even if I didn't grow up a massive OU fan, why the hell would I root for the lesser football program?

Yup OU paid over 2 Mill for the top QB in the portal and lowly women's basketball paid 1.5 million for the #1 player in the Country Chavez who by the way is from Texas and had the shorthorns in her top 2. NIL is horrible!

I don't think the fanbases have "chilled out". I just don't think there's any desire on either side to see this rivalry descend into some trashy public display of people brawling in the funnel cake lines at the fair or throwing haymakers in the stands.

The Texas/OU rivalry is unique. Look at the other great football rivalries.
Michigan/Ohio State - both excellent academic institutions in so-so towns. Peer institutions.
Bama/Auburn - both piss poor academic institutions in piss poor towns. Peer institutions.
Texas/OU - Texas is an excellent academic instituion while OU is a joke. Norman sucks while Austin is arguably the most vibrant city in this country. This rivalry was really only about football.
We all know $100 handshakes happen everywhere, but OU was one the few schools embracing instituionally-driven systemic cheating for many decades. They did it better than most. Now that everyone can pay players, OU will never be relevant again. Who wants to be rich in Norman? If you are intelligent, you know better than to want an Okie degree.
This "rivalry" is going to fade. Oklahoma is going to be humiliated by Texas for the 3rd time in 4 years this season. This hasn't happened in any of our lifetimes. A QB who ended his season by losing consecutive games to New Mexico, Oregon State, Wyoming and Syracuse isn't going to be the Okie savior in the SEC.
