I usually opt for the oven. I bought a fryer recently to make chicken fried backstrap with the deer meat I got this past weekend. Bought some corndogs last night to throw in there.

They like to pretend that LA had some great culinary tradition, but it's really just NOLA and a few other coastal towns carrying the banner.

Some of the worst Cajun or Creole food I've had came from upstate Louisiana
