I'm just posting stats because they are interesting and I think other SoS methods are flawed, no need to cry.
Do Texas fans even know what SoS is and means? It doesn't seem so.

Not much you can do about the bubble, but opponent adjusted ranks do somewhat ok using the few games we get. I'd love to see more OOC games and more links between conferences, which is part of the reason I hate people pushing the 9 game schedule.
G5 provide valuable data, but FCS does not.

Did you know that Texas SOS went down every time we played except once (Georgia).
Why, because we won, which downgrades the "strength" of the opponent.
After we beat Aggie, their "strength" will be downgraded.

False. Playing good teams often increases the strength of the opponent because these are opponent adjusted stats.

Metrics are a little more advanced and I believe this one does the opposite.
1. Does not count your opponents’ games against you.
2. Will count your wins against those opponents when figuring SOS for other teams that play those opponents.
The result is that winning will actually help your SOS at least as it compares to your peers who share opponents.

Sometimes, it depends.
It's not based solely on wins and losses, aka some kind of binary result like the most basic SoS methods which use opponent win%. Those are terrible.
As you say, you can lose a game and still be considered the better team by the metrics because you moved the ball well, and so on. Which is understandable, because the best team doesn't always win, and we need to rate them on a scale instead of some binary pass/fail.
But you can also lose a game and it hurt you as well. It's all a matter of who you are playing and how you do.
So, take the Texas vs Vandy game. That game increased the power of Vandy, which in turn increases the SoS for Texas. Because it was a close game and Vandy played them tough. IIRC, Vandy gained about 10 spots after that game.
But then you take the Oklahoma vs Alabama game this past weekend. That game hurt Alabama's power score because it wasn't all that close. Alabama dropped like 4 spots. Oklahoma's SoS took a small hit, along with everyone else who played Alabama this year.
Which is exactly as it should be.
It's the same for everyone. At best the only thing you can say is that your good team can't play itself. So for example, if Alabama is #1 and say Auburn is #50, and they both played the exact same schedule, then Auburn's schedule would be rated as more difficult. All because of the 1 game.
But that's not why Texas is sitting down at #40.

Answer: 0.
They also played 2 ranked OOC teams in those 3 years (Clemson and Oregon). Won both of them too.
Nobody blames Texas for the schedule they got handed. But you have to WIN against the good teams you play when you have a schedule like that, otherwise you won't be viewed as being very good.
And Texas lost their only game against a ranked opponent this year.

Thanks for complimenting the UGA defense, but seriously do you know how bad you have to be to have a QB rating in the 70s?? Brock Vandagriff and Jackson Arnold combined have been above that in 18/20 games this year.
