If you have to keep the temp that low to keep the humidity down then you actually need to see about downsizing your system when it comes time to replace it. Or consider the installation of a dehumidifier tied into the system.

I run fans/ceiling fans.

C) Usually need it that cold to make sure the AC is getting rid of the humidity

I have a nest, and it more or less sets itself. It’s like 78ish when we aren’t home, 75 ish when we are and 72ish around bedtime.
I’m not really picky, but the damn thing saves me 50-75$ every month.

I live 15 minutes from a Costco and an REI, and around some of most scenic areas you can find anywhere in our country that is livable. It gets cold but it’s definitely civilized.... around 100,000 or so year round residents. The town I live in is under 6,000 and sits at the crest of the Swan and Whitefish Ranges.

I live in a house built 5 years ago and the utilities are through Ga Power which is the 2nd cheapest for this area. We can run the AC on 66 all month and the utilities won’t get much over $200/month.
